Hearts never go out of style. I made this no bean chili with some heart shaped cornbread. It doesn't have to be the day of love to make heart shaped foods! . Since this February has been a little cooler, I thought it would be perfect to serve easy kid friendly chili with guiltless heart shaped cornbread.
I like to keep my chili recipe easy and manageable. This is a simple chili your kids will eat and it's on the table in just 30 minutes. Creating the perfect cornbread recipe was tricky for me. If it’s tasty and moist, it tends to be super fattening, but if it’s healthy and easy, it tends to be dry and bland. At last, I've created the perfect cornbread recipe that is both deliciously moist, and made with healthier ingredients.

How to Make No Bean Chili
To make your chili, begin by sautéing your ground beef and garlic.
Drain the excess fat from the pan, and then add in tomato, chili powder, oregano, cumin and salt.
Simmer for 30 minutes. While your chili cooks, get a small bowl and combine arrowroot powder and a half cup of water. Stir and then add to chili. Use low heat so the chili doesn't solidify.
Serve chili and cornbread together warm, with optional toppings like sour cream, shredded cheese or hot sauce.

• While this cornbread will be ready to eat right away, it is also a great example of a dish that you can prepare the night before. Whole wheat flour absorbs moisture over time, meaning that your cornbread will be softer and more moist on the second day.
• Make sure to keep your cornbread ingredients at room temperature. Coconut oil hardens when cold, so it is important not to mix it into ice cold milk or yogurt. It is best to measure out those ingredients and let them sit out while getting everything else together.
• Arrowroot powder tends to congeal quickly. I would use low medium heat when adding it.

Ingredients
- 1 ½ cup cornmeal
- ¼ cup whole wheat flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ teaspoon salt
- 2 tablespoons melted coconut oil or butter
- 1 egg
- 1 tsp vanilla
- ¾ cup nonfat Greek yogurt
- 2 tablespoon honey or stevia
- ¼ cup almond milk or non-fat milk
Instructions
- Preheat oven to 400 degrees F and line 8”x8” with parchment paper and non-stick spray.
- In a small mixing bowl combine the dry ingredients to include the cornmeal, flour, baking powder, baking soda and salt. Set aside.
- Stir together the Greek yogurt, honey, vanilla and almond milk in a large mixing bowl.
- Whisk in an egg and melted coconut oil. (Make sure to keep all ingredients room temp so honey and coconut oil doesn’t harden)
- Fold in the dry ingredients into the wet mixture. Making sure to not over mix.
- Pour into pan and bake for 18-22 minutes or until done.
