My recent trip to a local hamburger joint had me thinking about their delicious fried green beans. I also had green beans in the refrigerator that were about to go bad. For some reason, my intentions to cook green beans never come to fruition. They just sit and sit and sit in my fridge vegetable drawer. It’s probably because I’m not a huge fan of the green veggie and can never cook it perfectly… until this!
I tried this recipe on a whim and it’s so addictive! It was a joint effort at my house for dinner. My other half fired up the grill and made some steak and mashed potatoes. My contribution to dinner were these green bean fries!
P.S. My son eats what we eat. He had his steak cut in small pieces. Also, I photographed this meal before trying it with ranch. LOOOOVe it with ranch much more than marinara!
Fun Fact: Green beans
- Fresh green beans are very low in calories (31 calories per 100 g of raw bean pods) and contain no saturated fat. Nevertheless, these lean pod vegetables are a very good source of vitamins, minerals, and plant derived micro nutrients.
- The beans are very rich source of dietary fiber (9% per 100g RDA) which acts as a bulk laxative. Fiber helps to protect mucousa in the colon by decreasing its exposure time to toxic substances as well as by binding to cancer-causing chemicals in the gut. Adequate amount of fiber has also been shown to reduce blood cholesterol levels by decreasing reabsorption of cholesterol-binding bile acids in the colon.

Green Bean Fries
A tasty vegetable side dish
- 1/4 lb. green beans washed and trimmed
- 1/4 c. Parmesan cheese grated
- Dash of garlic powder
- 1/2 c. bread crumbs
- 1/4 c. flour
- 1 egg
Preheat oven to 425F
Line a baking sheet with foil and cooking spray
Make three stations
In bowl #1, add flour
In bowl #2, add beaten egg
In bowl #3, combine bread crumbs, Parmesan cheese, and garlic powder
Dip green beans in bowl #1 (flour), then bowl #2 (egg), then in bowl #3 (bread crumb mixture)
Make sure the bread crumbs completely coats each green bean
Place coated green beans in a single layer on a the prepared baking sheet
Bake for 10-12 minutes
Serve with ranch or marinara
