Broccoli Tater Tots

These broccoli tater tots are a healthier alternative to its traditional tater tot. It's a great picky eater food because everything is hidden.

Ingredients

  • 1.5 C. steamed broccoli
  • 1 egg
  • ½ small zucchini grated
  • ½ c. bread crumbs
  • ¼ c. cheddar cheese/Mexican cheese blend
  • ¼ tsp. 21 seasoning or garlic powder
  • tsp. salt

Instructions

  • Steam broccoli, or boil until soft.
  • In a blender, add all ingredients and blend until pasty
  • Next, form tater tot shapes with hands. You may also use a cookie scooper and spoon to form patties.
  • In a pan, add just enough olive oil to coat the pan. Cook on medium, high heat and turn all sides until brown
