Ingredients

  • 10 pieces plantain bananas
  • 2 cup brown sugar
  • 1-2 cup jackfruit cut into strips
  • 10 spring roll wrapper also called Lumpia
  • cooking oil - we're talking deep fry amounts

Instructions

  • Peel apart wrappers
  • Cut the plantains lengthwise
  • Place the brown sugar into a flat dish and roll the slices of banana completely covering each slice with generous amount of brown sugar.
  • Add plantain and strips of jackfruit onto the wrapper and then roll. Fold both sides (left and right) of the wrapper inward towards the banana. Use water to moisten the wrappers so it is easier to fold. Now roll it towards the other end away from you. Use water again to seal the edge.
  • Then coat the rolled banana "egg roll" with brown sugar and deep fry until golden brown.

Notes

Please use RIPE plantains. When purchasing them, the blacker they are the better!
