Sweet Potato Patties

This is so fun for the family to snack on or serve as a side! Make this sweet potato patties with leftover mashed sweet potato or frozen sweet potatoes.

Ingredients

  • 10-12 oz Bag Frozen Sweet Potatoes the microwavable kind
  • 1 large Eggs
  • ½ tsp Salt
  • ½ tsp Italian Seasoning
  • ¼ tsp Pepper
  • ¼ cup Parmesan Cheese grated
  • ¼ cup Bread Crumbs
  • 1 tbs Greek Yogurt
  • 1 tsp Olive Oil for cooking

Instructions

  • Start by microwaving the frozen bag of sweet potatoes according to the bag directions. Usually around 4 to 4 ½ minutes. When done set aside to let cool.
  • Mash sweet potatoes with a fork.
  • To the cooled and mashed sweet potatoes combine eggs, salt, Italian seasoning, pepper, parmesan, bread crumbs and Greek yogurt in a large mixing bowl.
  • Pack and form equal sized patties, about 8.
  • Heat oil in a pan, over medium heat, and shallow fry the patties until golden on all sides. (about 3ish minutes ). Let cool and enjoy.
  • Tips: Freeze up to 2 months. Fridge up to 4 days. Reheat by stovetop or microwave for 60 seconds.
