Sweet Potato Broccoli Patties

A patty packed with vegetables, but it still tastes so great!

Ingredients

  • 1 c. sweet potato cubed
  • 1 c. broccoli florets
  • 2 egg
  • ¼ c. shredded cheddar cheese
  • 1 c. bread crumbs
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • dash of salt
  • Olive oil

Instructions

  • Steam sweet potato and broccoli
  • In a blender, add all ingredients until it has a pasty consistency
  • Use a cookie scooper and add mixture on a oiled pan. Make sure to use low-medium heat.  Form into patties with the back of a spoon or the cookie scoop, , set aside
  • Brown both sides 
  • Serve with marinara, ketchup, or sour cream

Notes

  • Use low to medium heat 
  • Batter should be a pasty thick consistency
  • Do not flip too prematurely, they will break
