Baked Avocado Egg Rolls

- 1 RIPE avocado read blog why
- 1 Tbs. chopped red onions
- 1 C. shredded cheese of choice
- Dash of salt
- Splash of juice from lime optional
- Egg roll wrappers
Preheat oven to 400F
Peel and remove seed from avocado
Chop into squares
In a bowl, mix all ingredients until well combined
Gently pull wrappers apart. Set on a plate
On a clean surface, place one egg roll wrapper with point facing you.
Add a small amount of the avocado mixture on the end of the wrapper (see video)
Roll as shown in the video
Seal ends with a little water
Spray baking sheet with cooking spray, then spray egg rolls so both sides are oiled
Bake until brown about 10 minutes each side.
