Sweet Potato Muffins With Mix-Ins

Ingredients

  • 1 ½ cups all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 cup cooked sweet potato mashed
  • ½ cup coconut sugar
  • ¼ cup honey
  • 2 eggs whisked
  • ½ cup milk or almond milk
  • ¼ cup applesauce
  • ¼ cup avocado oil can be substituted with any flavorless oil or an additional ¼ cup applesauce

Instructions

  • Preheat oven to 375 degrees. Grease or line 2 mini muffin pans, set aside.
  • In a large bowl, mix together flour, baking powder, baking soda, cinnamon and salt, set aside.
    Sweet Potato Batter
  • In another bowl, mix together the rest of the ingredients until well combined. Add mix-ins if desired. Add to dry ingredients and mix until batter just comes together, do not over mix.

  • Fill muffin cups, bake for 10-15 minutes, or until toothpick comes out clean.

    -Cooked crumbled turkey sausage & spinach
    -Grated carrot & raisins
    -Grated apple & walnuts
    -Shredded zucchini & dried cranberries
    -Crumbled bacon & fresh corn
    -Scoop of flax meal or protein powder
