Easy Swedish Meatballs

Move over Ikea, this one may take your infamous Swedish Meatballs place. In 6 steps you'll have dinner on the table easy.

Ingredients

  • 1 pound Lean ground beef
  • ¼ cup panko bread crumbs
  • ½ Medium onion minced
  • 1 Egg
  • 1 teaspoon garlic powder
  • As needed
  • Salt and pepper
  • 1 ½ Tbs. Olive oil
  • ¼ cup Butter
  • 2 ½ Tbs.Flour
  • 2 cups Beef broth
  • 1 ½ cup Heavy cream
  • 2 Tbs. Worcestershire sauce
  • 3 sprigs Parsley chopped
  • 12 oz Uncooked egg noodles extra wide
  • Garnish - finely chopped parsley

Instructions

  • To make the meatballs, mix together beef, panko, onion, egg, garlic powder in a big bowl, season with salt and pepper, then shape to small meatballs.
  • In a large pot, heat up the olive oil. Add in the meat balls and cook until the bottoms are golden brown; flip all of the meatballs and cook till the other size is perfectly golden. Take out all the meatballs and keep them aside.
  • Add butter to the pot and let it foam up. Stir in the flour and whisk until it is evenly mixed with the butter. Cook for 2 minutes over medium low heat and stir constantly.
  • Slowly add in the beef broth and heavy cream, bring to a simmer. Add in the Worcestershire sauce, season with salt and pepper. 
  • Add in the uncooked egg noodles, cook over medium heat for 6 minutes, add more beef broth if the sauce is getting too thick. If preferred, you can cook the pasta in water instead of adding it here.
  • Add the meatballs back and cook for another 2 minutes. Check the doneness of the meatballs by cutting one open, or using a meat thermometer until the internal temp of 160F is reached.
  • Sprinkle with parsley, and check the seasoning again.

Notes

There are two options to this recipe. The one pot recipe version adds in the uncooked pasta and it's cooked in the broth. You also have the option of cooking the pasta in water and then just topping it with the Swedish meatballs and sauce.
