Guiltless Cornbread

Ingredients

  • 1 ½ cup cornmeal
  • ¼ cup whole wheat flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ teaspoon salt
  • 2 tablespoons melted coconut oil or butter
  • 1 egg
  • 1 tsp vanilla
  • ¾ cup nonfat Greek yogurt
  • 2 tablespoon honey or stevia
  • ¼ cup almond milk or non-fat milk

Instructions

  • Preheat oven to 400 degrees F and line 8”x8” with parchment paper and non-stick spray.
  • In a small mixing bowl combine the dry ingredients to include the cornmeal, flour, baking powder, baking soda and salt. Set aside.
  • Stir together the Greek yogurt, honey, vanilla and almond milk in a large mixing bowl.
  • Whisk in an egg and melted coconut oil. (Make sure to keep all ingredients room temp so honey and coconut oil doesn’t harden)
  • Fold in the dry ingredients into the wet mixture. Making sure to not over mix.
  • Pour into pan and bake for 18-22 minutes or until done.
