Ingredients

cornmeal

whole wheat flour

baking powder

baking soda

melted coconut oil
or butter

egg

tsp
vanilla

nonfat Greek yogurt

tablespoon
honey
or stevia
¼
cup
almond milk
or non-fat milk
Instructions
Preheat oven to 400 degrees F and line 8”x8” with parchment paper and non-stick spray.
In a small mixing bowl combine the dry ingredients to include the cornmeal, flour, baking powder, baking soda and salt. Set aside.
Stir together the Greek yogurt, honey, vanilla and almond milk in a large mixing bowl.
Whisk in an egg and melted coconut oil. (Make sure to keep all ingredients room temp so honey and coconut oil doesn’t harden)
Fold in the dry ingredients into the wet mixture. Making sure to not over mix.
Pour into pan and bake for 18-22 minutes or until done.
