Easy Chicken Satay with Peanut Sauce

This easy chicken skewer recipe brings comfort to your meal! It's so good and the sauce is homemade. All made in under 20 minutes

Ingredients

Peanut Sauce

  • ½ cup peanut butter
  • 2 Tb liquid aminos sub soy sauce
  • 2 Tb apple cider vinegar
  • 1 Tb fresh cilantro
  • 2 Tb lime juice
  • 2 teaspoon fresh ginger
  • 2 cloves garlic
  • ¼ teaspoon red pepper flakes optional
  • ½ cup coconut water

Chicken Satay

  • 1 lb chicken breast cubed
  • 2 teaspoon sesame oil
  • 3 Tb peanut sauce
  • Salt & Pepper
  • Optional Garnish
  • Fresh cilantro
  • Chopped peanuts

Instructions

  • Start by creating the peanut sauce. In a food processor combine the peanut butter, liquid aminos and apple cider vinegar. Should create a thick paste.
  • Toss the cilantro, lime juice, ginger, garlic and red pepper flakes to food processor and puree until ingredients are broken down.
  • Add coconut water to the peanut paste until desired consistency is reached. Set aside sauce.
  • In a mixing bowl coat cubed chicken with peanut sauce and salt and pepper to taste.
  • Skewer the chicken cubed and set let marinate for a few minutes.
  • Over medium high heat, in a large skillet, heat sesame oil.
  • Cook marinated chicken skewers in large skillet for 3-5 minutes on each side or until done. Garnish with peanuts and cilantro and enjoy. Serve warm with peanut sauce.
