Microwaveable Scrambled Eggs Recipe

Make these ahead of time and keep them in the fridge for up to a week. Mornings are a breeze because you can make these in the microwave in just a few minutes.

Ingredients

  • 12 Medium Eggs
  • 6 8oz Mason or Ball Glass Jars

For Swiss Ham Scramble

  • 2 tbs Mushrooms
  • 2 tbs Ham
  • 2 tbs Swiss Cheese

For Kid Friendly Scramble

  • 2 tbs Ham
  • 1 tbs Cheese shredded
  • 2 tbs spinach leaves optional

For Denver Scramble

  • 2 tbs Bell Pepper
  • 2 tbs Ham
  • 2 tbs cheese

Instructions

  • Start by making sure all ingredients are chopped into small pieces and your mason jars are clean and dry.
  • To make the Ham Swiss Scramble start by adding 1 tbs of mushrooms to 2 jars, then add 1 tbs of ham, followed by the cheese. Seal with a lid and store for up to 6 days in fridge.
  • For an easy Kid Friendly version fill 2 jars with 1 tbs of shredded cheese and 1 tbs of ham. For an added veggie, try an additional 1 tbs of chopped spinach. Seal with a lid and store for up to 6 days.
  • 4.o make the famous Denver Scramble, layer in 1 tbs each of shredded cheese, ham and bell peppers into 2 jars. Seal with a lid and store in fridge for up to 6 days.
  • When ready to eat, crack 2 medium eggs or 1 large egg into the jar and give it a good stir. Optional: add a cube of cream cheese or 2 tbs. of milk if desired.
  • Microwave for 1 minute and thirty seconds, stir and microwave again for another minute. The egg should be cooked, but if it’s still runny cook in thirty second intervals until done. Let the glass jar cool and enjoy!

Notes

Can be frozen for up to 1 months but in plastic air tight bags instead of glass jars.
Defrost in fridge and microwave in a microwave safe container with an egg per instructions.
Can be refrigerated for up to 6 days, uncooked before adding the egg.
Can use plastic air tight bags and transfer to microwave safe container when cooking with egg.
