Salmon Croquettes

These salmon croquettes are a great way to get your omega 3's in and also is an amazing way to introduce seafood to children.

Ingredients

  • ½ cup Bread Crumbs or Panko
  • 1 14.75oz Can of Salmon, drained
  • ¼ cup Green Bell Pepper
  • ¼ cup Red Bell Pepper
  • ¼ cup Plain Greek Yogurt
  • 1 Large Egg beaten
  • 1 tbs Worcestershire
  • 1 tsp Old Bay Seasoning
  • 1 tbs Butter
  • 1 tbs Olive Oil

Instructions

  • Combine bread crumbs, salmon, bell peppers, yogurt, egg, Worcestershire and Old Bay Seasoning until well combined.
  • Scoop salmon batter mixture evenly and pat flat to shape the patties.
  • Heat butter and olive oil in pan over medium-high heat and pan fry for 3-4 minutes on each side. Serve warm with a fresh squeeze of lemon and enjoy.

Notes

Can be kept in an air tight container, in the fridge, up to 3 days.
May be frozen, cooked, for up to 3 months.
Reheat by microwave or panfrying for 3 minutes on each side.
