Avocado Chicken Salad
This avocado chicken salad recipe is easy and healthy!
- 2 tbs Lime Juice
- 1 Avocado diced
- 6 oz Greek Yogurt plain
- ¼ tsp Salt
- ¼ tsp Pepper
- 1 tsp Honey Mustard
- ½ cup Red Grapes halved
- 1 Green Onion sliced
- 1 Celery Stalk sliced
- 2 cups Rotisserie Chicken shredded or chopped
In a mixing bowl, cream the lime juice, avocado, Greek yogurt, salt, pepper and honey mustard.
Fold in the shredded chicken, halved grapes, green onions and celery.
Chill for 10 minutes and garnish with extra parsley as desired. May be served room temp or chilled.
