Avocado Chicken Salad

This avocado chicken salad recipe is easy and healthy!

Ingredients

  • 2 tbs Lime Juice
  • 1 Avocado diced
  • 6 oz Greek Yogurt plain
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • 1 tsp Honey Mustard
  • ½ cup Red Grapes halved
  • 1 Green Onion sliced
  • 1 Celery Stalk sliced
  • 2 cups Rotisserie Chicken shredded or chopped

Instructions

  • In a mixing bowl, cream the lime juice, avocado, Greek yogurt, salt, pepper and honey mustard.
  • Fold in the shredded chicken, halved grapes, green onions and celery.
  • Chill for 10 minutes and garnish with extra parsley as desired. May be served room temp or chilled.
