Ingredients
2Large Cucumbers
1tbspKorean Red Chili Pepper Powder
2tbspSugar
1tbspMinced Garlic
1.5TbspApple Cider or Brown Rice vinegar
2tbspSesame Seeds
½ -1tspSalt
Instructions
Slice the cucumber thinly and round, then transfer to a large bowl.
In a smaller bowl, make the sauce by combining the remaining ingredients.
Toss the cucumber rounds thoroughly in the dressing.
Garnish with red chili flakes, green onion or sesame seeds as desired and serve fresh or chilled.
Notes
The type of Korean Red Chili Pepper Powder will matter! If possible, please visit a Korean supermarket if you want the desired authentic taste.
