Korean Cucumber Salad Recipe

This 10 minute authentic recipe is simple and easy and is a great side dish or snack!

Ingredients

  • 2 Large Cucumbers
  • 1 tbsp Korean Red Chili Pepper Powder
  • 2 tbsp Sugar
  • 1 tbsp Minced Garlic
  • 1.5 Tbsp Apple Cider or Brown Rice vinegar
  • 2 tbsp Sesame Seeds
  • ½ -1 tsp Salt

Instructions

  • Slice the cucumber thinly and round, then transfer to a large bowl.
  • In a smaller bowl, make the sauce by combining the remaining ingredients.
  • Toss the cucumber rounds thoroughly in the dressing.
  • Garnish with red chili flakes, green onion or sesame seeds as desired and serve fresh or chilled.

Notes

The type of Korean Red Chili Pepper Powder will matter! If possible, please visit a Korean supermarket if you want the desired authentic taste.
Will keep for up to 3 days in fridge.
