Homemade Chicken Meatballs

Make these tasty, juicy chicken meatballs in the oven in less 15 minutes!

Ingredients

  • 1 pound ground chicken
  • 1 egg
  • 1/2 c. shredded Parmesan cheese
  • 1/2 c. chopped spinach (optional)
  • 1/2 c. panko bread crumbs
  • 1/2 tsp. garlic salt
  • 1/4 tsp. salt or to taste
  • 1/2 tsp. onion powder
  • 1/8 tsp. pepper or to taste

Instructions

Air Fryer Instructions

  1. In a medium sized bowl, combine all ingredients until well incorporated 

  2. Using a cookie scoop, scoop out mixture and form into balls 

  3. Place several meatballs into the air fryer and cook at 370F for 6 minutes. Flip and brown for another 2-3 minutes 

  4. Serve with spaghetti and red sauce, alfredo or even rice.

Baking Instructions

  1. Preheat oven o 400F. Bake meatballs for 25 minutes or until internal temperature is 165F 

  2. Serve with spaghetti and red sauce, alfredo or even rice.

Recipe Notes

  • Use a food thermometer to prevent overcooking 
  • Use a cookie scoop, it will make perfect sized meatballs!
  • If baking, add two tablespoons of olive oil to the mixture to prevent dryness
