In a bowl, mash together bananas and coconut sugar into a paste.
Add in eggs and vanilla, whisk till slightly pale. Mix in maple syrup.
In a food processor, grind together oats, cocoa powder, salt and baking powder work till the oats are very small pieces.
Add the dry ingredients into the bowl with banana mixture, stir to evenly combine.
Mix in most of the coconut flakes and chopped pecans.
Line a a 9’x13’pan lined with parchment paper, then lightly spray. Pour the batter into the pan, spread evenly. Top the batter with the rest of the coconut flakes and pecans.
Bake for 12 minutes at 350F, till a cake tester comes out clean.
Notes
Use extra ripe bananas for a sweeter bar. You can also top it with some powdered sugar for a sweeter experience
