Ingredients
Green Aji Sauce
1cupcilantro leaves
12 medium jalapeñoscoarsely chopped
1garlic clovefinely chopped
1tablespoonextra-virgin olive oil
2 ½teaspoonsfresh lime juice
¼teaspoonkosher salt
⅓cupmayonnaise
Peruvian Chicken
1.5 teaspoongarlicminced
1 tablespoonground cumin
3tablespoonolive oil
1 tablespoon paprika
½ teaspoonblack pepper
½ teaspoondried oregano
1 ½teaspoonsalt
2 poundschicken thighswith skin
1juicelemon
Instructions
Green Aji Sauce
Purée all ingredients until smooth in a blender or food processor. Store in refrigerator covered until ready to eat.
Peruvian Chicken
Mix all seasonings into a large bowl
Add chicken thighs and combine until well incorporated. For better flavor add seasonings under the skin as well.
Marinate at least 3 hours
Airfry at 375 for 15-20 minutes. Use an internal thermometer until the thickest part reaches 165F. If you don't have an airfryer, roast at 400F until it reaches 165F
Serve chicken with green sauce, a side of french fries, or rice. Garnish with chopped cilantro

1 cup (packed) cilantro leaves with tender stems
1–2 medium jalapeños, coarsely chopped
1 garlic clove, finely chopped
1 tablespoon extra-virgin olive oil
2 ½ teaspoons fresh lime juice
