Baked French Toast Casserole

  • 1 loaf French bread may also use challah, multigrain loaf or brioche
  • ½ cup dates pitted
  • 4 tablespoons butter melted
  • 2 tablespoons vanilla
  • 6 eggs
  • 2 cups milk or almond milk
  • 2 tablespoons cinnamon
  • 1 teaspoon nutmeg
  • ¼ cup brown sugar Truvia
  • ¼ cup pecan pieces

Instructions

  • Preheat oven to 350 degrees and lightly spray 9x13 casserole dish.
  • Cube French bread into bite size pieces and place into prepared dish. Set aside.
  • In a food processor puree pitted dates, melted butter and vanilla.
  • Move date mixture into a mixing bowl and fold in the eggs and milk.
  • In a separate bowl, mix together the brown sugar truvia, the cinnamon and the nutmeg.
  • Stir in half of the cinnamon mix into the egg batter. Pour batter over cubed bread in the casserole dish, making sure bread is evenly soaked.
  • Top with remaining cinnamon mix and pecan pieces
  • Bake for 30-40 minutes and enjoy warm. Serve with fruit or favorite topping.
