No Bake Chocolate Chip Cookie Bites

10 minutes is all you need to make these lo carb, protein rich cookie bites recipe

Ingredients

  • 2 cup Almond Flour
  • ¼ cup Collagen Powder optional
  • ¼ tsp Salt
  • 2 tbs. Milk or milk alternative
  • 2 Tb Coconut Oil melted & cooked
  • 3 Tb Maple Syrup
  • 1 ½ Tb Vanilla Extract
  • ½ cup Chocolate Chips

Instructions

  • Start by whisking together the vanilla, coconut oil, milk and maple syrup in a large bowl.
  • In the same bowl, add the almond flour, salt and collagen until all ingredients are just combined. (if too dry, add a little more milk)
  • Now fold in the chocolate chips.
  • Roll into evenly sized bites and enjoy!

Notes

Can be frozen for up to 3 months
Can be refrigerated for up to 5-7 days
NOTE: IF OMITTING COLLAGEN, PLEASE ADD AN EXTRA 1 ½ CUP ALMOND FLOUR.  Also, depending on what collagen powder you use and almond flour it may develop a different consistency. Feel free to add a little more almond flour if too wet.
