Delicious Apples and Chicken


  • 1 lb. skinless boneless chicken thighs
  • ¾ tsp. salt
  • ½ tsp. pepper or to taste
  • 2 medium apples sliced thinly
  • 1 tsp dijon mustard
  • 2 tbs. olive oil divided
  • 1 tsp. rosemary dried
  • ½ tsp. oregano dried
  • 1 small red onion thinly sliced, optional
  • ½ c. chicken broth


  • Heat skillet over medium high heat. Add 1 tbs. olive oil.
  • Sprinkle a little salt and pepper on chicken
  • Add chicken to skillet
  • Cook until brown, about 4 minutes on each side, set aside
  • In a bowl, mix broth and dijon mustard
  • Add remaining oil to skillet and swirl
  • Add all remaining ingredients (broth and dijon mixture, rosemary, oregano, onion, and apples) in the skillet
  • Return chicken to skillet and cook until chicken, apples and onion are fully cooked.
