Heat skillet over medium high heat. Add 1 tbs. olive oil.
Sprinkle a little salt and pepper on chicken
Add chicken to skillet
Cook until brown, about 4 minutes on each side, set aside
In a bowl, mix broth and dijon mustard
Add remaining oil to skillet and swirl
Add all remaining ingredients (broth and dijon mixture, rosemary, oregano, onion, and apples) in the skillet
Return chicken to skillet and cook until chicken, apples and onion are fully cooked.
