Easy Sheet Pan Teriyaki Salmon and Veggies

Ingredients

  • 4 salmon filets
  • 2 cups sliced carrots
  • 2 cups green beans
  • 1 tablespoon coconut oil
  • ¼ teaspoon ground pepper
  • 1 teaspoon salt
  • cup honey
  • cup soy sauce
  • cup orange juice
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 teaspoon red chili pepper flakes
  • Sesame Seeds optional
  • Green Onions optional

Instructions

  • Start by preheating the oven to 400 degrees F and lining a baking sheet with parchment.
  • In a small mixing bowl stir together the honey, soy sauce, orange juice, ginger, garlic and chili pepper flakes. Set aside.
  • In a separate mixing bowl, the green beans and carrots in coconut, also giving a light sprinkle of salt and pepper.
  • Spread the mixed vegetables and salmon filets among the prepared sheet tray.
  • Pour your teriyaki sauce across the salmon thoroughly and drizzle the remaining over the vegetables.
  • Bake for 12-15 minutes and garnish with sesame seeds and sliced green onions. Enjoy immediately.

Notes

Use an internal thermometer to check for doneness. It's very easy to overcook salmon, trust me you don't want cafeteria style dry salmon ;)
