Chicken Jalapeno Poppers

This low carb tasty appetizers comes together in about half and hour and has only 7 ingredients!

Ingredients

  • 1 10.5 oz can Campbell’s®Cream of Chicken Soup
  • 1.5 cup Rotisserie Chicken chopped & shredded
  • 1 cup Sharp Cheddar Cheese shredded
  • ¼ cup Bacon cooked and crumbled
  • ½ tsp Garlic Powder
  • ½ tsp Salt optional
  • 15 Jalapenos
  • Optional Additions: Extra Cheese & Bacon Chives, Ranch

Instructions

  • Preheat the oven to 400F and prepare a sheet pan with parchment paper or non-stick cooking spray.
  • Start by halving each jalapeno and scraping the seed and rib out with a spoon.
  • In a large bowl combine the Campbells Cream of Chicken, chopped chicken, cheese, cheddar and garlic powder . Stir to combine.
  • Scoop about 1-2 tablespoons amount into each jalapeno until all are filled.
  • Evenly sprinkle bacon crumbles and cheese on the tops.
  • Bake for 20-22 minutes or until the edges have just begun to brown and cheese is bubbly.
  • Garnish with cheese and chives as desired, then serve warm.

Notes

Filled and prepped poppers can be kept raw 2 days prior to serving and kept refrigerated until baking.
Can be kept in an air tight container, in the fridge, up to 2 days.
Wear disposable gloves to keep from burning hands and skin, especially for little helpers.
May also be cooked in air fryer @ 375F for 8-10 minutes, depending on size. A few minutes less for smaller jalapenos and a few more for larger jalapenos.
Striped jalapenos are spicier than solid peppers.
For more heat leave more of the rib in the pepper. The rib and seeds carry the heat.
