Ingredients for Jalapeno Poppers Chicken
- Campbell’s® Cream of Chicken Soup – I love this little cooking shortcut! Skip the heavy, and sometimes cloying cream cheese filling, and instead, start out with a can of Campbell’s® Cream of Chicken Soup for a delicious and easy filling.
- Chicken – You will need 1 ½ cups of boneless skinless chicken. This is a great way to reuse leftover rotisserie chicken! I like to finely chop it or shred the chicken. This is a also a great way to use up dry chicken breasts.
- Cheese – You need 1 cup of shredded cheese. I prefer sharp cheddar for this dish.
- Bacon – The bacon in this recipe should be cooked and crumbled into small enough pieces to sprinkle on the tops of your peppers. It only takes about ¼ cup, but you may wish to make a little extra bacon for garnish (or snacking!)
- Garlic Powder – Garlic gives these poppers an extra boost of flavor.
- Salt – If your chicken is already seasoned, you may wish to leave this out since your Campbell’s® Cream of Chicken Soup is also already seasoned. But if you find that your filling needs a little something, add an extra ½ tsp of salt.
- Jalapenos – Striped jalapenos are spicier than solid peppers, so if you prefer more or less spice, consider this when purchasing. You should choose good, firm peppers since they will be the vessel for your cheesy chicken filling!
- Optional Extras – You might want to add more cheese and bacon, chives, or ranch for dipping these jalapeno popper stuffed chicken!
How To Make It
- Preheat the oven to 400F and prepare a sheet pan with parchment paper or non-stick cooking spray. Start by halving each jalapeno and scraping the seed and rib out with a spoon.
- In a large bowl, combine the Campbell’s® Cream of Chicken Soup, chopped chicken, cheese, and garlic powder. Stir to combine.
- Scoop about 1-2 tablespoons amount into each jalapeno until all are filled.
- Evenly sprinkle bacon crumbles and cheese on the tops.
- Bake for 20-22 minutes or until the edges have just begun to brown and cheese is bubbly.
- Garnish with cheese and chives as desired, then serve warm.
Step by Step Instructions
First, preheat your oven to 400F. Line a sheet pan with parchment paper, or spray with nonstick spray. Prepare your peppers! Slice each jalapeno in half lengthwise to form a boat to hold your filling. Scrape the seeds and ribs from the jalapenos and discard. This is where the spice comes from, so if you like spicier peppers, leave some of the rib in. Take care to wash your hands thoroughly after this step.
Next, mix your filling! Add your can of Campbell’s® Cream of Chicken Soup, shredded chicken, shredded cheese, garlic, and optional salt to a bowl, and stir to combine.
Fill your jalapenos. Spoon about 1-2 tablespoons of your filling into each jalapeno.
Once you have filled all of your peppers, sprinkle the tops with your crumbled bacon and more shredded cheese.
Bake your jalapeno chicken poppers for 20-22 minutes, or until edges begin to brown and cheese gets bubbly. Remove your jalapenos from the oven and cool for a few minutes before eating. Garnish with more cheese or bacon, and chopped chives as desired. Enjoy warm!

- Wear disposable gloves to keep from burning your hands and skin. This is especially important for little helpers!
- These jalapeno poppers can also be cooked in the air fryer! Cook in the air fryer at 375 for 8-10 minutes, depending on the size of your peppers.
- Leftovers will keep for 2 days in the refrigerator, in an airtight container.
- You can prepare the filling, and stuff your raw jalapenos up to 2 days in advance! Keep them in the refrigerator until you are ready to bake.
