This cheesy, spicy chicken filling gets baked in crispy wonton cups. And it is made with Campbell’s® Cream of Chicken Soup, so it is guaranteed to be a favorite. This recipe only takes 30 minutes to make, and the ingredients are simple. If you aren’t a fan of bleu cheese, swap it out for feta or even mozzarella.

Ingredients For Buffalo Chicken Bites
- Campbell’s® Cream of Chicken Soup – Campbell’s cream of chicken is the start to so many excellent recipes. You will need one 10.5 oz can to start the base of your filling.
- Chicken – You need 2 cups of cooked, shredded chicken. I prefer to use leftover rotisserie chicken, or to pick one up from the grocery store. Canned chicken could work in a pinch if you make sure it is well drained.
- Bleu Cheese – Buffalo and bleu cheese go hand in hand. If you really dislike bleu cheese, you could omit it or replace it with feta.
- Sharp White Cheddar – The flavors in this creamy buffalo chicken recipe work really well with sharp cheeses. I love the creaminess of white cheddar. Make sure it is shredded well so that it mixes evenly.
- Buffalo Sauce – Whether you get a name brand or generic, buffalo sauce usually tastes about the same. You only need ½ cup, so one bottle will do.
- Cream Cheese – No buffalo dip would be complete without cream cheese. Get it out before you begin cooking, so that it is nice and soft when it comes time to mix your ingredients.
- Wonton Wrappers – I think this is such a fun switch from the traditional bread based serving options. They are delicate, but easy to work with, and they provide a certain delightful crunch that doesn’t really compare to any other food item. If you don’t see them in your grocery store, try checking near refrigerated produce. It is usually near the tofu.
- Optional toppings – You can serve these bites right out of the oven, or you can top them with, chives, sour cream, or more bleu cheese or shredded chicken.
How to make Buffalo Chicken Bites
- Preheat the oven to 375F and grease a mini muffin tin. Take a wonton wrapper and fill the cavity of the muffin tin, making a cup shape. It’s easy to pinch the wrapper from the corners and then smooth the folds when in the cavity.
- Bake for 5-6 minutes or until the edges have just begun to brown. Set aside to cool when done.
- In a large bowl combine the Campbell’s® Cream of Chicken, chopped chicken, bleu cheese, white cheddar, buffalo sauce and softened cream cheese. Stir to combine.
- Scoop a tablespoon amount into each cup until all the cups are filled.
- Bake for another 5 minutes. The edges will be golden and the filling bubbly.
- Garnish with bleu cheese and chives as desired, then serve warm or room temp.
Step by Step Instructions
First, preheat your oven to 375, and grease a mini muffin tin with cooking spray or coconut oil. Next, make your wonton cups. Place a wonton wrapper in one of the cavities of the mini muffin tin. Gently press it down, so that it forms a cup shape. Smooth the folds and push back the corners so that the inside of the cup is even and easy to fill later on.
Bake your wonton cups for 5-6 minutes, or until the edges begin to brown. Take care not to get them too crispy, as you will be returning them to the oven later on. Remove your muffin tin from the oven and set aside to cool.
Now it is time to make your buffalo chicken filling! Add your shredded chicken, bleu cheese, white cheddar, buffalo sauce, and the softened cream cheese. Mix until completely combined, making sure to scrape the bottom of the bowl.
Pour your Campbell’s® Cream of Chicken Soup into a large mixing bowl.
Fill your wonton cups! Scoop about 1 tablespoon of filling into each cup. Return your muffin tin to the oven and bake for an additional 5 minutes, or until your filling is bubbly, and the edges of your wontons are golden brown.
Allow your buffalo chicken bites to cool a little, and then garnish as desired, with bleu cheese and chives. Enjoy warm or at room temperature.
Cook's Tips
- For crispier wonton cups, lightly brush your wrappers with oil before placing them in the mini muffin tin.
- While you will want to make your wonton cups fresh, you can prep the filling up to 2 days in advance, and keep it in the refrigerator.
- Keep your leftover buffalo chicken bites in an airtight container in the refrigerator for up to 2 days. Note that the wonton wrappers will soften in the refrigerator, and your buffalo chicken bites will taste best fresh.
