Ingredients:
- 2 sweet potatoes peeled and thinly sliced (try looking for a slender potato for smaller circles)
- ½ cup heavy whipping cream
- ½ tsp chopped garlic
- ¼ tsp thyme (fresh is best, but I used dried)
- salt and pepper to taste
- ½ cup shredded mozzarella cheese (you can add more or less)
- olive oil spray or oil for greasing pan
- chopped cooked chicken (optional)
1. Peel and cut sweet potatoes thinly into medallions
2. Grease muffin pan with olive oil and layer sweet potato and cheese (sweet potato shrinks when cooked so layer it a little above the rim)
4. Microwave whipping cream, salt, pepper, and garlic for 1 min
5. Pour mixture into muffin cups (about 1 tbsp per cup)
6. Cover with aluminum foil and bake at 350f for about 20 minutes (this depends on thickness of your sweet potato, so check it)
7. Add one more layer of cheese of desired and bake for another 5-6 minutes
