Just 15 minutes is all you need to make these super cute easy mini bird nests. I came up with this recipe because my kids are a little bored of eggs. I always try to offer protein rich foods in the borning. Since most breakfast choices have so much carbohydrates, I had to think outside of the box. We all know most kids including my sons love toast and anything with bread. Who am I kidding, adults love bread too. This is perfect for the upcoming Easter holiday.
You can also just make these without the coconut and just add just fruit on top for an everyday meal or snack.
Easy Mini Bird Nests

- 3 eggs
- 2 tbs butter melted
- ½ c. milk
- ¼ tsp. salt
- ½ c. flour
- ½ c. coconut shredded
- 10-15 drops green food coloring optional for grass
- yogurt covered raisins
- Coconut oil spray or any other spray for greasing tin
Instructions
- Preheat oven to 400F
- In a blender, add eggs, butter, milk, salt, and flour
- Blend
- Grease mini muffin tin with coconut oil spray
- Pour egg mixture into tin halfway full
- Bake for 10 minutes
- Remove, from tin and let cool, the nests will sink down
- In a bowl, add shredded coconut
- Add drops of food coloring into coconut until desired color is reached
- Assemble nests with grass, and yogurt covered raisins
- Enjoy!
